4-5 lbs boneless pork butt, trimmed and cut into 1 1/2 inch pieces
salt and pepper
3 T soy sauce
2 med onions, chopped
1/2 C chili powder
6 garlic cloves, minced
3 T vegetable oil
2 T canned chipotle chili in adobo sauce, minced
2 t dried oregano
3/4 C brewed coffee
1/3 C all purpose flour
3/4 C chicken broth
1/4 C raisins
1/2 C fresh cilantro, minced
2 t grated lime zest
1T lime juice

Directions:

Season pork with salt and pepper. Combine pork and soy sauce in slow cooker. Combine onions, chili powder, garlic, oil, chipotle, oregano and 1 t salt in bowl. Cover and microwave until onions have softened, about 7 minutes, stirring halfway through microwaving.

Puree broth, coffee, flour, raisins and onion mixture in blender until smooth, about one minute.

Add onion mixture and sauce to meat in slow cooker. Cover and cook until pork is tender, 6-7 hours on low setting.

Turn off slow cooker and let chili cool for 5 minutes and skim any fat from surface. Stir in lime zest, lime juice and cilantro. Let rest for about 15 minutes and sauce will thicken. Season with salt and pepper to taste.

After 50 years of experimentation, this is my best effort. If you like beans in your chile, just add whatever canned bean you like when you add lime and cilantro. This will keep beans firm. If you like spicier, just add more chipotle chills.
