Crust:
1 C flour
1/2 tsp salt
1/2 C sugar
1 C rolled oats
1/2 C melted butter (1 cube)

Filling:
2-3 C diced rhubarb
1 TBSP flour
1/2 C sugar
1 tsp cinnamon
1 TBSP water

Directions:
Directions:
Blend together the ingredients for crust; press half of the mixture over bottom and sides of 8-9 inch pie tin. Combine ingredients for filling. Pour into pie tin with crust. Sprinkle remaining oat mixture over top. Bake 350 degrees for 45 minutes

"Mother always had a rhubarb plant (and so do I-Jenine). Mom was always looking for recipes to use her rhubarb. The filling can be made and frozen in freezer containers and used when a dessert is needed on short notice. I always have 8-10 containers in my freezer. Whip one up when the missionaries come or when we have friends over for dinner."
