3 lbs boneless beef chuck
1/2 C flour
3 C thinly diced onions
6 cloves chopped garlic
2 tsp (2 oz) sweet Hungarian paprika
3 red peppers diced
1 C diced carrots
1 T dried marjoram
1 tsp caraway seeds
1 tsp ground back pepper
3 bay leaves
2 C beef or chicks sock
1 C dry white wine
1 /4 C tomato puree or 2Tb tomato paste
1/2 - 1 C sour cream or creme frCHE
salt pepper to taste

dredge meat in flour, salt & pepper to taste; saute in vegetable oil; add onions and cook over medium heat until onions are lightly colored and soft; add garlic, cook for 1 minute, add paprika, stir, cook for 2 minutes; add peppers,carrots, seasoning, caraway seeds, stir; add 2 c ups stock, wine, tomato puree; bring to boil , reduce heat to low and simmer covered stirring occasionally until meat is tender 1 1/2 - 1 3/4 hr.,; skim off fat from surface; stir in 1/2 -1 c sour cream or creme fraiche; salt and pepper to taste;

serve with egg noodles or spaetzle
