1 (2lb) Pkg Frozen Hash Browns (thawed)
1 lb Pork Sausage (ham, bacon, etc can be used instead)
1 Small Onion, diced
5 Eggs
1/2 Cup Milk
1/2 tsp Onion Powder
1/8 tsp Garlic Powder
Salt & Pepper to Taste
12 oz Shredded Cheddar Cheese

Preheat oven to 350. grease a 2 qt baking dish. Place hash browns in the bottom of baking dish.

Heat a skillet over medium heat & cook, stirring sausage & onion until sausage is crumbly, evenly browned & no longer pink. Drain. Meanwhile, whisk eggs, milk, onion powder, garlic powder, salt & pepper. Pour over the potatoes. Layer with 1/2 cheese, the sausage mix & the remaining 1/2 cheese. Cover with aluminum foil.

Bake in preheated oven for 1 hour. Remove cover, return casserole to oven & bake until knife inserted into center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.
