2-4 baking potatoes

Sour cream
Grated Mexi-cheese blend
Butter
Bacon - optional

Directions:
Directions:
Clean and wrap potatoes in foil. Bake in 350 oven for 1 hour until soft to touch.
Let potatoes cool approx. 30 minutes. Slice potato in half - try to keep foil intact. Scoop out inside of potato leaving the shell of potato in foil.
Mix scooped out potato, sour cream, butter and bacon and blend well with a fork. Put heaping mound of mixture back into potato shell and add additional cheese on top.
Return to oven and heat just until potatoes are warm and cheese is melted on top.
