Crepes -
1 C. flour
1 1/2 C. milk
2 eggs
1 T. cooking oil
1/4 t. salt
Filling -
2 C. chicken breast - cooked and sliced very thin
2 C.grated cheddar cheese
Chopped, fresh mushrooms
Sauce -
2 T. margarine
2 T. flour
Salt and Pepper to taste
2 C. cream
2 C. chicken broth

Crepes - Combine ingredients and beat lightly until blended.
Heat a lightly greased 6" skillet. Pour about 2 T. batter and spread evenly in pan. Brown one side only. Yields 12-16 crepes.
Filling - Cook and debone chicken or cook 2 cups chicken breasts and slice thin. Fill crepes with chicken, grated cheese and fresh, chopped mushrooms. Roll up crepes. Put rolled side down in casserole dish.
Sauce - Melt margarine. Add flour to make a roux. Slowly add liquids, stirring constantly, until thickened.
Pour white sauce all over crepes, add any leftover cheese and mushrooms to top of crepes. Bake in 325 oven until sauce bubbles and cheese is melted. (approx. 30 min.)
