2 lb. ground chuck
2 tsp. salt
1/2 tsp. pepper
1/2 C chopped onion
Chopped celery and carrots
1/2 C fine dry bread crumbs or cracker crumbs
1 C (16 oz) tomatoes
1 tsp. dry mustard
2 large eggs, slightly beaten

Directions:
Directions:
Combine ground chuck, salt, pepper, onion, celery, carrots, and bread crumbs
Drain tomatoes, reserving the juice
Chop tomatoes and add reserved juice so tomato mixture equals 1 1/4 cups
Dissolve dry mustard in 1 T of the tomato juice
Add tomatoes, eggs, mustard to meat mixture - mix well
Line bottom and sides of a 9x5x3" loaf pan with aluminum foil and pack meat mix in pan
Bake at 350 - 1 hour and 15 minutes
