1 to 1 and 1/4 pounds boneless skinless chicken breasts

2Tbl. Olive oil plus more for coating chicken
1Tbl. Butter
1cup sliced shallots
1/2cup dry white wine (can substitute chicken stock)
1/2 cup water
4Tbl. Dijon mustard, smooth or whole grain
1Tsp. Dried thyme
1/4 cup heavy cream

Directions:

Make sure chicken pieces are of equal size. Coat with a little olive oil and place between plastic wrap or parchment paper to pound them evenly about 1/4 inch each.

In large heavy sauté pan heat olive oil on medium to medium high heat. Stir in the butter. When it is foamy, add chicken pieces to pan. Lightly brown on one side and then turn over to brown on other side. Do not overcook chicken. Remove from pan while you make the sauce. Add the shallots and turn heat to medium. Stir to coat. Cook until softened, about 5-6 minutes.

Add white wine to pan an increase heat to high. When most of the wine has evaporated, add the water, the mustard and the thyme. Reduce by half. Reduce the heat to low. Add the chicken to the pan and remove from the heat. Drizzle in the cream and add more salt if needed. Serve with egg noodles, rice or mashed potatoes.
