2 Tablespoons grated gingerroot
5 cloves garlic, crushed
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 c. margarine (I use olive oil)
Juice of 1 lime
1 (5-lb) leg of lamb
1 Tablespoon ground coriander
1/2 teaspoon cayenne
1/2 teaspoon ground cloves
1/2 teaspoon cardamom

Mix ginger, garlic, salt, pepper, margarine (or oil), and lime juice. Make gashes in the leg of lamb. Spread the mixture over the surface. Place in roasting pan and allow to marinate for at least 2 hours in the refrigerator. Mix the rest of the dry spices in a small skillet and stir over light heat for 4 minutes. Sprinkle the combined mixture over lamb and place in a preheated oven at 350º for 2 hours.
