Tomato & Mozzarella Salad Recipe

Mix in small container:

2 tablespoons red wine vinegar
1/3 cup olive oil
1/4 teaspoon dry mustard
1 clove of minced or crushed garlic
4 Sliced Roma tomatoes
Mozzarella Cheese
8 to 12 fresh Basil leaves

Set aside.

Take a shallow dish (about 10”-12” square or round with some sides)

Slice 4 Roma Tomatoes and place side by side in bottom of shallow dish.
Salt and pepper tomatoes to suit your taste.
Top each tomato slice with a thin slice of mozzarella cheese (enough to cover most of each tomato section)

Drizzle the oil & vinegar dressing over the tomatoes and cheese.

Take 8-12 FRESH Basil leaves. Rinse and pat dry (if needed).
Stack leaves and then tightly roll and slice thin (almost chopping).
Top sliced tomatoes & cheese with basil.

Chill at least 30 minutes and serve.

Makes a great appetizer or side dish.
