Heat enough oil or lard in a skillet so eggs will not stick. Add salt to taste. Fry eggs to preferred texture. Remove cooked egg to plate.

Into same skillet slice some tomatoes. I use two tomatoes for every 4 eggs. Add as much sliced onion as you like, but not too much. Add Chile Serrano for some added spice. Sauté until wilted. Add 1 cup or water, bring to slow simmer. Once mixture comes to a boil, lower heat and add grated cheese. Cotija is especially good for this recipe. Return cooked eggs to the sauce and simmer 3-5 minutes so flavors come together. Taste for salt and pepper.

Cut peeked potatoes into 2"-3" sticks. In separate skillet, pan fry the potatoes in oil until golden brown and tender. Drain potatoes from oil. Serve on platter, pouring eggs and sauce over the pan fried potatoes.
