1 3/4 boiling water
1 cup brown sugar
1 cup sugar
1/2 cup margarine or butter
2 eggs
1 3/4 cup four
1 teaspoon baking soda
1/2 teaspoon salt
6 oz mini chocolate chips
3/4 cup chopped walnut (Optional)

Preheat the oven to 350 degrees. Prepare a 9 x 13 pan by greasing the bottom and dusting it with flour, or by spraying with Pam, that includes flour. Se the pan aside.

Put the oats in a medium sized bowl, pour the boiling water over them, cover and let them sit and soak while you get other things ready. Cream the butter and the two sugars in a mixing bowl adding the eggs, one at a time. Blend until well incorporated. In another bowl sift together the flour, baking soda, and salt. When the oats have absorbed all of the water and are cool mix in the butter/sugar/egg mixture, then incorporate the dry ingredients. It will be quite runny. When it is all well blended, add the chocolate chips and the nuts, if you are using them. Bake the cake for about 35 minutes, until the top has a nice brown color and a tooth pick inserted into the center of the cake comes out clean.

This is one of the moistest cakes I've ever had. It does not need frosting. It has a lovely flavor. This is my go-to cake for an informal dinner or pot luck. Be sure that the oats have cooled down before you begin assembling the cake, or it will cause the butter or margarine (whichever you use) to meal too much and it will cause the mini chocolate chips to melt, ending up marring the color of the cake.
