4 chicken breast bite size pieces
3 medium onions diced
1 pepper diced
8 mushrooms quartered
2-3 sweet potato chopped really large
6 carrots halved
1 cabbage quartered
2 cartons of passata.
chicken stock 2 cubes
1 tbsp chicken seasoning
1 1/2 tbsp Mixed herbs
3-4 cloves garlic
1 scotch bonnet chili
black pepper to season
2 tbsp Jerk seasoning

Marinade the chicken, onions and garlic half the amount of Jerk seasoning and chicken seasoning

whilst that is marinating chop the other vegetable.

Then when all vegetable is prepared.
Fry the chicken to brown it with the onion and garlic (fry light if being good but tastes better with olive oil about 2 tbsp).
Add in the carrot and sweet potato and continue to fry for around 5-8 minutes on medium heat.
Then add in the mushrooms, pepper. Fry for another couple of minutes. Then add in chicken stock (probably 2 in a cupful of water). Add passata and the rest of the spices. The scotch bonnet and cabbage on top and put boiling water to cover cabbage.
Simmer everything covered for about 30-40 minutes until chicken and vegetables all cooked. Then uncover and leave simmering to boil the water down. Depending how much water you put in will probably be about another hour.
