1 (approx 5 lb) seedless watermelon
1 sweet onion
1/4 C red wine vinegar
1/2 C extra virgin olive oil
2 T chopped fresh mint
4 oz feta cheese, crumbled
salt and pepper

Directions:
Directions:
Cut flesh of watermelon into bite sized chunks. Peel and slice onions into rings.

In small bowl, make dressing by whisking vinegar with salt and pepper. Slowly whisk in olive oil until emulsified. Add the chopped mint.

In large bowl, combine watermelon, onion and feta. Pour dressing over the melon mixture and toss until everything is evenly coated.

I like to add extra mint leaves as it gives a very "summer" and fresh taste.

Also, be careful with your salt, as it will draw the water out of the watermelon, especially if it sits too long. If you are making ahead of time to serve later, I would leave out the salt altogether.
