3 to 4 pound Eye of Round roast
Mix together and rub on roast:
1 tablespoon vinegar
1 tablespoon brown sugar
1/4 teaspoon All-Spice
1/4 teaspoon black pepper
1and 1/2 teaspoons dry mustard
1 tablespoon paprika
2 teaspoons salt

Directions:
Directions:
Place in roasting pan, but don't cover or add water. Cook at 300º until meat thermometer reaches 175º for rare. If you want it medium-rare, cook for about 5 to 8 minutes longer but check the temperature using a meat thermometer. Should be around 190º.

The vinegar helps to make the meat tender. This is a recipe that doesn't use onions. I thought Corey might like it.
