½ cup of organic quinoa sprouted
1 cup of heirloom carrots, thinly sliced
1 tablespoon fresh parsley, finely shredded
1 teaspoon freshly grated turmeric
1 tablespoon currants
Juice and zest of 1 lemon
1 tablespoon olive oil
Salt and pepper to taste

Method to Sprout Quinoa: place quinoa in a bowl of water at least 8 hours and drain.

Place all ingredients in a bowl and combine. Will last for 2 days in the fridge.
