2 cups plain flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1/2 cup shortening (Crisco)
2 beaten eggs
1 teaspoon vanilla
3 ripe, mashed bananas
1/2 cup chopped nuts (optional)

Directions:
Directions:
Sift first 3 dry ingredients. Cream sugar and Crisco. Add flour, blend in eggs, vanilla, bananas and nuts. Pour into 9"x5"x3" loaf pan, well greased to the bottom. Bake at 350º approximately 50 to 65 minutes. Cool a little before slicing.
