1 lb ground pork
grated pecorino Romano Cheese
eggs
italian style breadcrumbs
fresh parsley
fresh garlic
black pepper
dash of salt
olive oil

Directions:
I use my food processor but, if you don't have one, go old school style and use your hands. Add ingredients in a large bowl and knead with hands until blend...otherwise put half pound of pork in food processor

Add about 1/2 cup of grated romano
Add an egg blend until pork is smooth
Add in other half pound of pork
Add another 1/3 of grated cheese
Add another egg mix

I use a whole bunch of fresh parsley and pretty much a whole bulb of garlic and chop it up fine... I add it to the mix

Add a dash of salt, I use cracked pepper and I like them a bit spicy..it's your option .

Add another egg and blend in the processor again

** little hint** I do not use tons of breadcrumb .. this is what my mom taught me.. add a little to a cup..maybe a tablespoon of breadcrumb.. add a few drops of water to moisten them.. then turn the processor back on and add the breadcrumb. This will prevent the meatballs from being to dry. :) Thanks MOM!! ...

anyway, this the part where I "EYE" them I might add another egg or might not...depending on how the meatballs feels..

usually I add another. Now to make them..I make them small and I dip my hands in water as I make each one so the meat doesn't stick to my skin...

I'm old school and I fry them in olive oil. Only to brown them on each side so I can add them to my sauce. :) Sorry I can't give exact measurements.. LOL It's just not possible,, I do like to make them tasty and I use a lot of grated cheese. It makes a difference as well.
