1 lb pork loin medallions
1 cup all purpose flour
1 tbsp kosher salt
1/2 tsp fresh black pepper
1 tbsp olive oil

Sauce:
1 tbsp olive oil
1 minced shallot or 2 or 3 green onions
1/2 cup wine or beer
3 tbsp whole grain mustard
1/4 cup maple syrup
1/2 cup heavy whipping cream
1/2 tsp kosher salt
1 8 oz pkg fresh sliced mushrooms

Directions:

1. Mix flour, salt and pepper in a medium bowl. Slice the pork loin into thin medallions and lightly season with the flour mixture.
2. Place a large saute pan on medium high heat and add the olive oil. When the pan is hot, add the pork medallions and cook for 2 - 3 minutes on each side, until the pork is cooked all the way through. Remove to a platter.
3. Add 1 tbsp of olive oil to the pan with the minced shallots (or onions). When translucent, deglaze the pan with wine or beer. Add the mustard and syrup and reduce by 1/2. Add the heavy cream and reduce the sauce until it is the desired thickness. Meanwhile, microwave the mushrooms until tender; drain and add to the sauce. Season the sauce, return the pork and heat through. Serve immediately.
