1 cup butter, softened
4 1/2 oz package instant chocolate pudding and pie filling mix
1 egg
2 cups all purpose flour
3 tbsp sugar
1/2 cup apricot or cherry preserves

1/2 cup chocolate chips
3 tbsp butter

Directions:
Directions:
Preheat oven to 325º.
1. In a large bowl, cream butter and pudding mix until light and fluffy; beat in egg. Gradually add flour at low speed until well mixed and dough forms.
2. Shape into 1 inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets (or parchment lined). With thumb, make an imprint in the center of each cookie. Bake for 15 - 18 minutes, or until firm to the touch. Remove from cookie sheets immediately and cool completely on wire racks.
3. Fill each imprint with 1/2 tsp preserves. In a small saucepan, blend chocolate chips and butter over low heat until the chocolate melts, stirring constantly. Drizzle 1/2 tsp chocolate over each cookie.
