1/2 pkg (2 lb pkg) Elbow Macaroni, uncooked
1/2 cup margarine or butter
1/3 cup unsifted flour
2 tsp dry mustard
1-1/2 tsp salt
5 cups milk
4 cups (1 lb) shredded sharp cheddar cheese

Directions:
Directions:
Cook macaroni as package directs; drain. Preheat oven to 375º. In a large saucepan, over med-heat, melt margarine; stir in flour, mustard and salt. Gradually stir in milk. Cook and stir until mixture thickens slightly and bubbles. Remove from heat. Add 2 CUPS cheese; stir until melted, in a large bowl, combine sauce and macaroni. Spoon into a greased 13 x 9 baking dish. Top with remaining 2 CUPS cheese. Bake 40 minutes or until hot and bubbly. Let stand 10 minutes before serving. Refrigerate leftovers.

Serves: 10-12

You can use a combo of milder cheddar, mixed with the sharp to equal a lb, especially if you are preparing for families and children.
