3 chicken breasts
3oz. Cooked ham 6 slices cut 3x1 1/2in.
3 oz. Swiss cheese 6 slices
6 tbsp all purpose flour
1/2 tsp salt
1/4t. Pepper
4 eggs
2 tbsp. water
1 1/2 cup bread crumbs
Oil for frying
2 tbsp butter
2 tbsp. lemon juice

Skinned side down cut pocked. Slice horizontal lengthwise from thicker side starting 1 inch from wing area. Cut 3/4 way through, flatten breasts to 1/4 in thickness. Place ham in 6 equal stacks. Wrap each stick in cheese. Place in breast pocket, wrap meat around. Refrigerate 30 min.
Combine flour, pepper. Beat egg, water in plate. Coat breasts with flour. Dip in egg, coat with crumbs. Refrigerate. Cook chicken in single layer in 1/4 inch of hot oil in large skillet 10min. Turn once. Transfer in baking sheet. Bake 325 oven 10 minute smelt butter over low heat, stir in lemon. Pour over chicken.
