2 c. all-purpose flour
3/4 c. sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 c. chopped pecans
1 large egg
¼ cuo oil
3/4 c. orange juice
1 1/4 c. fresh rhubarb, finely chopped

Directions:

Preheat oven to 350 º F. In a large bowl combine flour, sugar, baking powder, baking soda salt and pecans. In medium bowl, beat egg, stir in oil and juice. Add to flour all at once and stir just until batter is moist. Stir in rhubarb. Lightly grease muffin tin, (or use baking cups) and fill cups three-quarters ful. Bake for 25 to 30 minutes.
