1 lemon's outer rind (zest)
1 lb. sugar
1 gallon boiling water
1 envelope dried yeast
juice from the lemon
raisins and sugar for bottles
Bottles with air tight seal

Directions:
Directions:
Bring to boil water and pound of sugar. Remove from heat. Rinse & dry lemon, zest it's outer yellow peal. Add zest to sugar/water mixture and let cool. When lukewarm ad yeast and juice. Let stand 2 days. Sima is then poured into bottles through a sieve. Add 1 tsp sugar and a couple raisins in each bottle. Cap tightly and place in a cool place. After about a week or 2, the raisins will have floated to the top. This is a good indication that Sima is ready for your enjoyment. Be careful not to let it ferment too long, or you will enjoy it too much!

Caution! I have made this before and it is delicious, but it can also be explosive, as I have had them explode in the fridge.
