Ingredients: 8 ounces (15 sheets) graham crackers 8 tablespoons unsalted butter, melted 1/2 cup brown sugar
5 (8-ounce) packages cream cheese, softened (room temperature) 1 1/4 cups sugar 3 tablespoons all-purpose flour 1 teaspoon finely grated lemon zest 1 cup white chocolate chips, melted (if more white chocolate flavor desired, increase to 1.5 cups and decrease white sugar to 1 cup) 1/2 teaspoon vanilla 5 large eggs (room temperature) 2 large egg yolks (room temperature)

Directions:Before starting, set out cream cheese and eggs on counter, allowing to warm to room temperature.
Make crumb crust: Combine graham crackers and brown sugar in food processor. Add melted butter while still warm. Press onto bottom and up the sides of 8 or 9.5in springform pan (if you use an 8", best to use two small 4" pans as well to avoid overflow). Let crust set in freezer while preparing the filling.
Make cheesecake filling: Preheat oven to 450ºF.
Beat together cream cheese, sugar, flour, and lemon zest with an electric mixer until smooth. Add melted white chocolate. Add vanilla, then eggs and yolks, one at a time, beating on low speed until each ingredient is incorporated. Pour into crust.
Place pan of shallow water on bottom rack of oven.
Bake at 450ºF for 12-15min. Cake should be puffed up. Decrease oven temp to 300ºF and bake for an additional 60min. Turn oven off, and leave cake in cooling over for another 60min. Remove and allow to reach room temperature prior to refrigerating overnight, or at least 6hr. |

Notes: Getting closer to the elusive title of world's best cheesecake...hold on to this one for future reference. Simple, subtly unique, and perfect with fresh berries. With strawberries, blueberries, and raspberries, this was a 4th of July winner!
