Vinaigrette:
1/4 cup white wine vinegar
1 garlic clove minced
2 tbsp. chopped fresh basil
1/4 cup olive oil
1/4 tsp. salt
fresh ground black pepper

Salad:
2 cups cooked, shelled edamame
1 1/2 cups corn kernels
2/3 cup thinly sliced sun-dried tomatoes
1/4 cup diced red onion
1/2 cup kalamata olives cut in half
1/3 cup crumbled feta cheese
2 cups greens (arugula and spinach or whatever you like)

Directions:
Directions:
Dressing: Combine all ingredients except the olive oil and mix well. Slowly add the oil with a whisk. Add salt and pepper.
Salad: Combine edamame, tomatoes, onion, olives, feta and add the dressing and let marinate 30 mins.
When ready to serve toss with greens and serve.

Saw this last summer in the Relish magazine that comes in the Portland newspapers once a month. Thought it sounded good, so I made it and of course made a few little changes which are here. Cool and tasty and good for you!
