2 cloves garlic minced
1 large onion chopped
1 bell pepper chopped
2 stalks finely chopped celery
2 T cooking oil
1 lb smoked sausage sliced
1 lb smoke ham cubed
1 1/2 lbs boned chicken cut up
salt & pepper to taste
2 tsp or more Crystal Hot Sauce
Cajun Seasoning to taste
4 cups rice cooked in chicken broth

Directions:
Saute' veggies in oil until tender. Set aside. In a separate pan cook chicken, sausage and ham until browned. Add the veggies and a little water to pan and cooked until flavors are melded. Combine with cooked rice, season,add hot sauce and Cajun Seasoning adjust liquid and serve.
