4 LGE EGGS
1 C. SUGAR
2 t. BAKING POWDER
3 C. FLOUR
1 t. SALT
2 t. ALMOND EXTRACT
2 C. CHOPPED WALNUTS
2 T. POPPY SEEDS

PREHEAT OVEN TO 350. IN A LGE MIXING BOWL COMBINE OIL, EGGS, AND SUGAR. IN A SEPERATE BOWL COMBINE THE BAKING POWDER, FLOUR, AND SALT. MIX WELL AND ADD TO THE EGG MIXTURE BLENDING WELL. NEXT ADD ALMOND EXTRACT, WALNUTS, AND POPPY SEEDS, BATTER WILL BE STIFF. SPRAY A 9X13 PAN AND SPREAD BATTER INTO PAN AND BAKE 20-30 MIN, UNTIL GOLDEN; LET COOL. CUT INTO 3/4" SLICES AND PLACE ON SPRAYED COOKIE SHEET.

BAKE 10-12 MIN UNTIL FIRM. REMOVE FROM OVEN, TURN SLICES OVER AND BAKE 10-12 MIN. MORE. MANDELBROT SHOULD BE FIRM TO THE TOUCH AND ARE BETTER AFTER A FEW DAYS.
IF DESIRED, COOKIE CAN BE DIPPED IN MELTED CHOC.-THEY ARE DELICIOUS PLAIN TOO.
