Ingredients:  
1.5 lbs halibut or salmons fillets 1" thick
1 lb ripe fresh tomatoes OR 1-28 oz diced tomatoes, drained
2 tbsp vegetable oil
1/2 large onion, diced
1/2 green pepper, diced
1 tbsp ground cumin
1 1/2 tsp ground tumeric
1 tsp paprika
salt to taste
1/2 tsp freshly ground pepper
1/4 cup chopped fresh cilantro

1. Chop tomatoes "fine"
2. Heat oil in large saute pan, add onion. Saute over medium heat until golden brown. Add tomatoes, cumin, tumeric, paprika, salt and pepper. Bring to a boil, add green pepper. Cover and simmer 10 minutes.
3. Add 2 tbsp cilantro to sauce. Add fish and sprinkle with salt and pepper. Bring to a simmer. Cover and cook over low heat 7 minutes. Turn over and cook an additional 7-10 minutes or until fish flakes.
4. Serve fish hot or at room temp. Sprinkle with remaining cilantro.
