2 T Vegetable Oil
3/4 c diced white onion
3/4 c diced celery
1/2 c diced carrot
1/4 c diced green bell pepper
2 T minced garlic
4 (15oz) cans black beans
4 c chicken stock
2 T apple cider vinegar
2 t chilli powder
1/2 t cayenne pepper
1/2 t cumin
1/2 t salt
1/4 t hickory liquid smoke

Garnish with montery jack-cheddar cheese blend, chopped onion and sour cream

Directions:
Directions:
1) Heat oil in large saucepan over low.

2) Add vegetables and simmer for 15 minutes.

3) Strain and rinse beans.

4) Puree 3 cups beans with 1 cup chicken stock until smooth.

5) When veggies are read add pureed beans and remaining chicken stock and spices.

6) Bring mixture to boil.

7) Put in crock pot on low for 2-8 hours. Add remaining beans last 2 hours.
