"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

Ingredients:
Ingredients:
9 to 12 boccocini balls (3 per serving)
Prosciutto, 6 slices
28 oz can of firm ripe plum tomatoes (DOP)
2 cloves garlic
4 tbsp extra virgin olive oil
salt
fresh ground black pepper
fresh basil leaves

Directions:
Directions:
Wrap each boccocini ball with proscuitto and place 3 each in small oven proof dishes such as ramekins.

Make marinara sauce by pressing tomatoes through a food mill and draining some of the extra liquid off to get the consistency you want. Add garlic, oil, salt and pepper and mix.

Pour some of the marinara sauce over balls in each dish and bake at 350º for about 10 minutes or until the cheese starts to softened and is heated through. Do not heat until they melt or you will have a mess. Top with small basil leaves and serve.
