3 Eggs
1/2 cup sugar
1/4 cup butter, melted
1/2 teas. Salt
1/3 cup milk (approx.)
1 teas. Vanilla extract
1 teas. Ground Cinnamon
1 teas. Nutmeg
2 1/2 cups sweet potato (fresh / canned) (heaping cups)
2 tbls. Fresh lemon or orange juice
1 9-inch pie shell, unbaked
1/2 cup pecan halts, optional

Directions:
Directions:
Beat eggs and sugar. Add melted butter, salt, milk, vanilla, and spice. Blend egg mixture with mashed sweet potatoes and lemon or orange juice. Pour into pie shell. Garnish with pecans if desired. Baked at 400º for 10 minutes, reduce to 375º for 40 minutes longer or until golden.
