2 tbsp olive oil
4 cloves of garlic
3 - 4 leaves of fresh basil cut into thin strips
3 cans 400 grams each plum tomatoes
1 tsp sea salt
1/2 tsp pepper

Directions:
Directions:
Heat olive oil in a heavy non stick pot over medium heat, add the garlic, once the garlic began to color add the basil strips and tomatoes. Squish the tomatoes with a potato masher or a stick blender.

Add salt and pepper. As soon as the tomatoes come to a boil, remove pot from heat. Strain the sauce through a course sieve into a bowl. Discard the basil and garlic. Pour the sauce back into the pot, bring to a boil, then turn down the heat and simmer, stirring periodically until the sauce has reduced slightly and thickened in consistency.
