4 c. packed fresh basil leaves, washed well
1 1/2 c. fresh parsley, washed well
1/2 c. pine nuts, toasted until golden, cooled and chopped fine (or walnuts)
1/2 c. freshly grated parmesan cheese
2 large garlic cloves, minced
1/4 c. plus 3 T EVOO
salt and pepper to taste

Puree everything in a food processor until smooth. Season with salt and pepper.

Pesto may be made up to 2 days ahead, stored in a fridge, it's surface covered with saran wrap.
