3 egg whites
1/4 tsp cream of tarter
6 T sugar
1/2 tsp flavoring *

Directions:
Heat oven to 400º. Beat egg whites with cream of tarter until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. DO NOT UNDER BEAT. Beat until sugar is dissolved. Beat in flavoring. Pile meringue onto HOT pie filling, being careful to seal the meringue onto edges of crust to prevent shrinking or weeping. Swirl or pull up points for decorative top. Bake 8-10 mins., or until delicately brown. Cool away from drafts.

* Flavor according to pie being made. 1/2 tsp vanilla, almond extract, etc. For Lemon Meringue Pies 1 tsp lemon juice may be used.

For 9-inch pie.
