Ingredients:  
Spiral Pasta Noodles, Multi-Colored (Spinach, tomato & plain mixture)
Cooked according to package directions
Chicken, cooked and cut into bite sized chunks
Tart apples, cored, sliced & cut into bite size pieces (I prefer peel on)
Lemon juice- to dress apples, to prevent browning
Celery, finely sliced
Sweet onion, very finely diced
pineapple tidbits (reserve some of juice)
mandarin oranges
1 carrot, shredded
Serve Salad on Romaine Lettuce leaves
Top with slivered almonds

Dressing:
Mayonnaise
salt and pepper to taste
ginger to taste
splash of pineapple juice

Directions:
Directions:
Cook pasta according to directions. Coat with a little olive oil to prevent sticking. Cool. Toss with other ingredients. Add dressing. Chill. Serve cold. Serve on washed and dried whole Romaine lettuce leaves. Top with slivered almonds Great for luncheons with croissants or scones.

Ingredients can be varied to your personal tastes and what you have on hand: Try adding shredded coconut, or use shredded turkey, vary the nuts used....
