French Silk Chocolate Pie Recipe

1/2 cup butter (or marg.) softened
3/4 cup sugar
2 (1 oz) squares unsweetened chocolate, melted & cooled
1 tsp vanilla
2 eggs at room temp.
1 cup whipping cream
1/4 cup finely chopped nuts (optional)
1/4 cup grated chocolate (optional)
8 inch pie shell (cools)
or Grahame cracker crust

In 1-1/2 qt. bowl, cream butter on low speed in electric mixer. Gradually add sugar and cream well. Blend in cooled chocolate and vanilla. Add 1 egg and beat for 5 minutes, add another egg and beat for 5 minutes (This is important.)*

Turn into pie shell. Chill 2 hours or until firm. Serve topped with whipped cream. If desired. add a sprinkling of walnuts or pecans and/ or grated chocolate.

Tip: You may melt 1/3 square of chocolate and drizzle it over the whipped cream as garnish. Do not subsitute non-dairy products.

This is one of the pies that was part of the pie making class I took. It is very rich, but divine.
*This pie calls for eggs that will not be cooked, think of buying pasteurized eggs. This is such a good pie. It is worth the extra expense.
