2 C all-purpose flour
2 C sugar
1 t baking powder
1 t baking soda
1 t ground cinnamon
3 C finely shredded carrots
1 C cooking oil
4 eggs

Directions:
Directions:
Combine flour, sugar, baking powder, baking soda and cinnamon. Add carrots, oil and eggs. Beat with an electric mixer till combined.
Pour into 2 greased and floured 9 x 1 1/2 in round baking pans. Bake in 350 oven for 30 to 35 minutes or till a toothpick inserted near the center comes out clean. Cool on wire racks for 10 minutes. Remove cakes from pan and cool thoroughly on racks.
