Old Hen, celery, 1/2 onion
20 oz bread crumbs (1 1/2 bags)
3 C diced celery
2 1/2 C diced onions
5 beaten eggs
3/4 peeled apple diced
1 3/4 t sage
1 3/4 t poultry
1/4 t cumin
1 1/4 t sugar
dash parsley
1 1/2 t (plus 1/8 tsp if needed) salt
1/2 t (plus 1/8 tsp if needed) pepper

Boil an old Hen 2 to 2 1/2 hours slowly till tender in 3 quarts water, with stalk of celery and half an onion. Strain broth and keep for dressing and keep chicken aside to be used in another dish. ie) Chicken salad
Dice 3 cups celery and 21/2 cups onion.

Day of: Heat broth till boiling and pour 3 cups over bread crumbs to start softening. Saute celery and onions in 3 T butter in pan. Don't over cook. Beat 5 eggs and add celery, onions and eggs to bread crumbs. Add 3/4 diced apple. 1 3/4 t (plus 1/8 tsp if needed) sage, 1 3/4 t poultry seasoning, 1/4 t cumin, 1 1/4 t sugar, dash parsley, salt & pepper. Add 7-9 cups broth to bread crumbs. Stir & taste, grease a 13 X 9 pan with Crisco. Put dressing in pan and bake 350º for 30 min, stir ends in and bake another 30 to 60 min. If have other items in oven it will take longer
