1 1/2 - 2 c. vegetable oil
2 eggs beaten
1 1/3 c. milk
2 1/2 c. self-rising flour
4 T. sugar
1 tsp. vanilla
1 - 1/2 inch funnel
powdered sugar
Directions:
Directions:
Preheat oil in electric skillet to 375º. Beat eggs; Mix in milk. Mix flour and sugar. Add gradually to egg mixture. Beat until batter is smooth. Hold finger over hole in funnel. Pour batter into funnel. Remove finger to allow batter to drop into hot oil. Turn in circular motion to form "cake" the size you want. Fry until cakes are golden brown and puffy, turning once. Remove with tongs or slotted spatula. Drain on paper towels. Sift powdered sugar on top and serve warm.
