1 cup milk + 1 Tablespoon Lemon juice
Allow mixture to stand for 5 minutes

1 cup milk + 1 Tablespoon vinegar (white or apple)
Allow to stand for 5 minutes

1 cup milk + 1/2 Tablespoon cream of tarter
Whisk or use fork to blend well.

1/4 cup milk + 3/4 cup plain yogurt
Whisk till no lumps remain. Can be used immediately.

1/4 cup milk + 3/4 cup sour cream
Whisk till no lumps remain. Can be used immediately.

Notes: Any type of milk can be used, skim, non-fat, whole, etc.
The important thing is that you have an acid with the dairy, to cause the lactic acid. This creates the light and fluffy airiness and helps with rising in baked goods.
