3-4 lb Pork Butt
Pork rub
4 sprigs thyme
1 head garlic split through equator
Bay leaf
1 med onion sliced
1 qt unsweetened apple juice
1 qt chicken stock

Directions:
Directions:
Rub pork with rub, plastic wrap, refrigerator for several hours or over night.
Slow cooker add sliced onions. Set pork on top, add garlic, thyme, bay leaf.
Add stock and juice, should cover 3/4 of pork.
Cook on low 8-10 hours until just about to fall apart.
Put pork aside and save pork stock for pasta e fagiole soup (see recipe)
Make the Ultimate BBQ sauce or use favorite sauce. Add to pork in slow cooker on low for several hours
