5-6 lb. Brisket (preferably the flat end)
dash garlic salt
dash each of celery seed and paprika
dash salt & pepper

BBQ Sauce
1/2 c. catsup
1 tbsp. chili powder
1/2 c. water
1 tbsp. vinegar


1 tbsp. Worcestershire sauce

Douse thoroughly with liquid smoke and pierce with fork. Mix all the salts together and rub into the meat. Wrap in foil and let stand for 12 hours at room temperature. Open foil and sprinkle with Worcestershire sauced on both sides. Wrap tightly and bake at 225º for 6-8 hours. Unwrap and let set for at least 45 minutes. Slice thinly and cover with BBQ sauce.
