3 1/2 to 4 pounds of beef brisket
1 c. buttermilk
1/2 c. ketchup
2 tbsp. frozen orange juice concentrate
1 tbsp. liquid smoke
1 1/2 1 tsp. BBQ sauce
1/8 tsp. salt
1 large onion, chopped

For the BBQ spice, make your own by combining, pepper, cayenne (red pepper), garlic salt and ground mild chiles to your own taste.
Pour buttermilk over meat, cover and marinate in the refrigerator at least one hour. Remove meat from marinade and pat dry.
Combine ketchup with next four ingredients until well blended. Stir in onion and spread over meat. Place meat on rack in roasting pan and cook, uncovered, in a 275º oven for 3 1/2 hours or until tender. Remove roast from pan, garnish with salad vegetables, if desired, and serve with pan drippings.
