½ c. soft shortening
2/3 c. sugar
2 tsp. grated lemon rind
1 egg
3 T. lemon juice
1 T. water
1 ¾ c. flour
1 ¼ tsp baking soda
¼ tsp. salt
¼ tsp. cream of tartar
½ c. finely chopped nuts

Directions:
Directions:
Mix together shortening, sugar, lemon rind and egg.
Add and mix lemon juice and water.
Sift flour and dry ingredients, then add to shortening.
Add chopped nuts.
Best to chill dough. With floured hands, roll dough into balls – size of small walnut.
Place about 1 inch apart on ungreased baking sheet.
Makes 3-4 dozen.

Bake 10-12 minutes at 400°.
Cookies are done when light brown on bottom – not on top.
Immediately remove and roll in confectioners sugar.
