1 bunch of fresh leaf lettuce
3 spring onions
4 or 5 strips of bacon
¼ cup sugar
¼ cup vinegar

Cut lettuce into strips
Cut up onions and add to lettuce and set aside
Make dressing
Cut bacon into very small pieces and fry in small skillet, save about ¼ cup of the bacon grease, if not enough grease add some cooking oil
When bacon is crispy add sugar and vinegar and let it boil for a minute, don’t overcook or it will get syrupy and sticky but cook it long enough to cook the sugar so it is not grainy
Let dressing cool some and pour over lettuce, toss and enjoy
Serves 4 people
Increase amounts for larger batch
