8 cups crushed strawberries
6 cups sugar
Lemon juice

Measure strawberries into a large heavy bottomed pan. Add 1 tablespoon lemon juice to every cup of crushed berries.

Over medium heat, stirring occasionally, bring strawberries to a boil. Add sugar, stirring now constantly until sugar dissolves. Increase heat to bring the mixture to a rapid boil. Continue to stir constantly until mixture passes one or more of the test for jelly stage. I cook until I can place a spoon into the mixture and it sticks to the spoon. Generally about 30 minutes. Just be careful and make sure you keep the mixture moving so it will not burn.

Remove from heat and skim off any foam and pour into hot prepared jars. Place hot lids on jars and allow to seal. Enjoy!
