2 heaping tablespoons virgin organic coconut oil
1 large chopped sweet onion
1 tablespoon finely diced fresh cilantro

1/3 cup 100% natural peanut butter
1 tablespoon raw apple cider vinegar
1 tablespoon Braggs Liquid Aminos
1 teaspoon sea salt
2 teaspoons garlic powder
1/2 teaspoon crushed red peppers
2 teaspoons cumin
1 teaspoon cinnamon
1 1/2 tablespoons raw honey

1 large can (28 ounces) Muir Glen fire roasted diced tomatoes
1 can (14.5 ounces) tomato sauce

1/2 pound cooked boneless organic chicken, diced

1. In a skillet on low heat, sauté the onion and cilantro in the coconut oil. When soft, transfer the onion mixture to a medium to large saucepan.

2. Add the second set of ingredients (spices, seasoning & peanut butter) to the saucepan. Mix well until fully blended.

3. Add the 2 cans of tomatoes and the cooked chicken. Mix well. Simmer on medium low heat for 20 minutes.

4. Serve over cooked brown rice (or other grain).

5. Serve with optional toppings: dry roasted peanuts & fresh chopped cilantro.
