4 lbs. chicken
8 oz. crushed pineapple
sm. can sliced water chestnuts
1/2 c. soy sauce
1 c. vinegar
3/4 c. sugar
1 tsp. ground ginger
2 T. cornstarch
1/2 chopped green pepper

Directions:
Directions:
Place chicken in shallow baking dish. In saucepan combine pineapple, soy sauce, sugar, vinegar, ground ginger, and cornstarch. Cook over medium heat until thick and bubbly. Pour hour of mixture over chicken. Bake at 400º for 30 minutes. Turn chicken and pour other half of sauce over it. Add green pepper and chestnuts. Bake 30 minutes. Serve over rice.
