3/4 lb. Chorizo Sausage (casings removed,crumbled)
1/2 cup chopped onion (red preferred)
1/2 green Chile pepper (seeded and diced)
4 eggs
4 tortillas
1 cup shredded cheddar cheese

Directions:
Directions:
1. Generously coat a large frying pan with cooking spray. Cook and stir Chorizo over medium high heat until well browned and crumbled. Add onion and Chile pepper, and continue cooking until onion is tender.

2. Beat eggs in a bowl, and add to Chorizo mixture. Reduce heat to medium-low, and continue cooking and stirring until eggs are scrambled and no longer runny.

3. Warm flour tortillas on griddle or in the microwave for 30 seconds. Spoon mixture into the middle of each tortilla and top with shredded Cheddar cheese.

4. Roll up like a burrito, and enjoy!

* optional - smother with Peppered Gravy mixed with 1 lb. of fried, crumbled sausage (regular or hot). Garnished with shredded cheese and salsa.

* We leave out the really good stuff like jalepenos, hot sauce, etc... to appease the gringos. You can add them accordingly.

* Add a cup of diced, fried potatoes in the filler if you need to make it go a bit further. (or just for grins)

A breakfast burrito using chorizo sausage, great for when you're craving greasy breakfast food (i.e. - when you're hung-over).

We (Irva and I came up with this recipe at a camp-out at State Line Dam in Wyoming back in 1995 (I think).
